Our Japanese-style sour pickle, salty and briny like the cold, clear waters of the Maine coast, features the best of summer in a jar. We love these pickles as a palette-cleansing side dish to flavor-rich foods like burgers, sausages, pork belly, and fried clams. These kyurizuke cucumber pickles are only available for a limited time, as long as we can get cucumbers from our local farm!

INGREDIENTS: Cucumbers, kosher salt, water, sugar, ginger, kelp, soy sauce (water, soybeans, wheat, sea salt, koji), nigari (sea salt precipitate)

Pickles are naturally fermented and should be refrigerated upon receipt. White sediment at the bottom of the jar is normal and a natural byproduct of fermentation.

Summer in Japan is the season of festivals, lanterns, fireworks, and refreshing foods! We think there’s nothing quite as refreshing a nice cold cucumber pickle. Tsukemono is Japanese for pickles, and kyuri means cucumber.

This is a naturally fermented pickle, which means you should store it in the refrigerator. At room temperature, little bubbling or overflow of liquid is possible and totally normal. A whitish sediment on the bottom of the jar is a natural byproduct of fermentation and safe to eat.

Products are delivered via USPS Priority Mail and will be mailed out Tuesday or Wednesday of each week.

Kimchi should be refrigerated as soon as you receive it. In the hotter summer months, we might have to pause delivery (extreme heat is bad for kimchi!), but we’ll notify everyone our website and social media in advance.

For those who live in Maine, free local pickup is available at our kitchen.
