Fiddleheads, ramps, and chives meld beautifully with the first frost-sweetened bok choy crop of the season, Maine maple syrup, and a bit of spice from red pepper flakes. You'll be enjoying Maine spring all year long!

Pickles are naturally fermented and should be refrigerated upon receipt. White sediment at the bottom of the jar is normal and a natural byproduct of fermentation.

Sansai is the Japanese word for wild foraged vegetables, and we've taken this concept and married it in a ferment with our own Maine spring veggies . Delicate fiddleheads and ramps appear as winter melts into spring, just after the maple sugaring season. The bok choy, chives, maple syrup, and mushrooms in this ferment are all grown in Maine. We added a bit of spicy pepper flakes (not traditionally Japanese) to give the deep umami flavors of the veggies a little boost, for a medium spice level.

This is a very limited edition ferment, based on the brief availability of wild fiddleheads and ramps during the spring season. Over-foraging of these wild plants remains an issue in the culinary community. We only made one batch of these this spring!

This is a naturally fermented pickle, which means you should store it in the refrigerator. At room temperature, little bubbling or overflow of liquid is possible and totally normal. You might see a whitish sediment on the bottom of the jar, which is a natural byproduct of fermentation and safe to eat.

Products are delivered via USPS Priority Mail and will be mailed out Tuesday or Wednesday of each week.

Kimchi should be refrigerated as soon as you receive it. In the hotter summer months, we might have to pause delivery (extreme heat is bad for kimchi!), but we’ll notify everyone our website and social media in advance.

For those who live in Maine, free local pickup is available – you’ll see the option when you check out.
