Make perfect kimchi right on your home countertop with this double-lidded fermentation container. These modern kimchi containers have largely replaced the traditional earthenware onggi that have been used in traditional Korean fermentation. They’re made of BPA-free, sturdy polypropylene plastic mixed with Korean red clay, mimicking the breathability of onggi while being easier to store and clean (and not needing to be buried in the ground all winter!) The inner silicone-edge lid presses firmly down on the contents inside, creating a vacuum seal to exclude oxygen while carbon dioxide can be expelled through the air vent.

The 8.5L (2.2 gallon) size is perfect for a full homemade batch of kimchi, and fits nicely in a back corner of your fridge. The best part – every time you take some kimchi out of the container, press the inner lid back down for a continuous seal to ensure that your kimchi is protected from air until the very last bite.
