The deep, briny flavors of this kimchi, made with napa cabbage and Maine-grown and harvested sugar kelp, will make you dream of long summer days, pine tree forest, cold ocean water, rocky coastlines, and all the natural beauty that makes Maine "the way life should be"! The kelp leaves in our Maine Kelp Kimchi are 100% organic, sustainably harvested kelp from Maine Coast Sea Vegetables, based in Hancock, Maine. We are delighted to partner with them to bring this Maine-inspired kimchi to life!

Pickles are naturally fermented and should be refrigerated upon receipt. White sediment at the bottom of the jar is normal and a natural byproduct of fermentation.

We've always been a little bit out of the box here at Red Kettle Kimchi. But when we were first approached with the concept of making kimchi with fermented seaweed, it wasn't the first thing on our wishlist. Kelp is not a traditionally fermented food in East Asia, and is instead usually dried and eaten as a flavoring agent, in soups, and a standalone condiment in dishes. Kelp isn't subtle; one bite and you KNOW it's there. We worried it might even overpower the other ingredients in the kimchi. But then it dawned on us - this is as Maine as it gets, and what better way to show off the wonder and beauty of our state? We strive to make our kimchi the perfect blend of Asian heritage and Maine bounty, to cultivate our own sense of place and give each part of our ferment is own story.

So here it is, our take on a kelp ferment! It's briny and wild and not subtle at all at telling its story, and we love that. Our many thanks to the folks at Maine Coast Sea Vegetables for sending us sample packs and bearing with us through many test batches. 

This kimchi is naturally fermented, which means you should store it in the refrigerator. At room temperature, a little bubbling or overflow of liquid is possible and totally normal.

Products are delivered via USPS Priority Mail and will be mailed out Tuesday or Wednesday of each week.

Kimchi should be refrigerated as soon as you receive it. In the hotter summer months, we might have to pause delivery (extreme heat is bad for kimchi!), but we’ll notify everyone our website and social media in advance.

For those who live in Maine, free local pickup is available at our kitchen.
