Pickles are naturally fermented and should be refrigerated upon receipt. White sediment at the bottom of the jar is normal and a natural byproduct of fermentation.

Duo jiao 剁椒 (literally "chopped peppers") originates in Hunan Province, the home of blazingly spicy Chinese cuisine.  We've reimagined this beloved condiment with a Maine-centric vibe. Our hot pepper relish is made with long finger hot peppers - the exact variety depends on seasonality, but generally includes fresnos, birds eye chilies, and fresh cayenne. Ginger and garlic punch up the top flavor notes, while Maine maple syrup rounds it out and gives it just a hint of sweetness and body. We have our own lil’ not so traditional spin on it with a couple of zingy Sichuan peppercorns - not from Hunan province, but we love the slight tingle that it provides. We’ve been putting this on EVERYTHING (ok maybe not on our kimchi but everything else!). It's best used as a hot sauce substitute, but also goes amazingly with grilled meats and of course on top of rice bowls.

This is a naturally fermented relish, which means you should store it in the refrigerator. At room temperature, little bubbling or overflow of liquid is possible and totally normal.

Products are delivered via USPS Priority Mail or UPS (depending on weight) and will be mailed out Tuesday or Wednesday of each week.

Kimchi should be refrigerated as soon as you receive it. In the hotter summer months, we might have to pause delivery (extreme heat is bad for kimchi!), but we’ll notify everyone our website and social media in advance.
